(Ca-bear-nay Sew-vee-n'yon) Cabernet Sauvignon produces some of the world's best known and fashionable wines. The finest examples are exceptionally long lived and can last for up to 30 years. The classic French noble grape; the backbone of Claret, it is now produced in almost every wine producing country worldwide. It has recently been introduced into Italy, Spain and Portugal, to compliment their indigenous varieties. In Australia, Chile and the US, it is frequently used as a single variety. All wines made from Cabernet Sauvignon have some of the same characteristics, with a high tannin content, good body and structure. Sometimes known as the ëRibenaí wine it always has some blackcurranty aroma and flavours. In warm climates, the grapes fully ripen and the wine is ready to drink earlier than when it comes from cooler regions like Bordeaux. It is often blended with Merlot, which is softer and ripens more easily (Almost always in Bordeaux for Claret blends) If customers like the flavour of Cabernet Sauvignon but do not like the taste of tannins, always suggest Southern Hemisphere wines, as these are much softer. Cabernet responds very well to oak ageing, and this is pretty much standard practice in all but the very cheapest wines. Flavours. Many flavours but, mainly Blackcurrant, Herbs, Eucalyptus, Cedarwood, Tobacco, and Mint
